
Potstickers are Chinese food recipes special not only in Chinese cuisine but also widely popular in China and Japan and outside of East Asia, particularly in North America. As per Chinese transliteration it is known as Jiǎozi and in Japanese transliteration it is known as Gyōza.
What are Chinese food potstickers?

When you want to make dumplings for a party or celebration in large amounts, it can be prepared ahead of time and frozen. Then when needed, it can be re-cooked with the sauce.

Potsticker dough
Potstickers dough is prepared in hot water. When the dough is prepared in boiling water, it gives greater elasticity, holding a better shape. It is the secret to many Chinese food recipes.
How to cook the potsticker
Potstickers are common to steam or pan-fry the dumplings. The filled dumplings are fried in the pan on one side and then steamed in broth or water. The potstickers are crisp and browned on the bottom, sticking lightly to the pan, which can be easily removed with the help of a spatula. You have to be careful that it is not overcooked else they will stick firmly to the pot/pan.
Potsticker recipe with filling: Garlic Chive & Ginger Pork Dumplings
Ingredients
Minced pork, 1 pound
Chinese celery, washed and coarsely chopped, 1/2 bunch
Garlic chives, florets removed and chopped, 1/2 bunch
Fuji apple, minced, 1/4
Minced ginger, 1 tsp
Soy sauce, 1.5 tbsp
Sugar, 1/2 tsp
Sesame oil, 1 tbsp
Corn starch, 1 tbsp
Dash of sea salt
Pepper
Round wonton wrappers, 1 package
Beaten Egg to serve as the glue to seal the dumpling, 1 nos.
Method
Mix all the filling ingredients. To assemble a dumpling, place a wonton wrapper in your left palm. Spoon about 1/2 a spoonful of filling into the center. Using a pastry brush, wipe egg all around the filling, to the edges of the dumpling. Fold dumpling into a half moon, pressing with your fingers to seal the top, and then tuck the left and right edges in. Press to seal.
If steaming, dumplings are finished when slightly wrinkled and the filling feels tender, but solid (about 15 minutes). If boiling, drop dumplings into a rolling boil, lower heat to medium. Dumplings are cooked when floating in about 4 minutes. Serve hot with citrus dipping sauce.
Dipping sauce
1 tsp soy sauce
1/2 tsp olive oil
juice of 2 calamansi citrus fruits or juice of 1 lime
