Quick Way to Make a Tasty Vegetable Sandwich

Ingredients

makes 4 sandwiches

1 eggplant
2 zucchini
1/2 bag spinach
1 Ciabatta bread
1 garlic clove, peeled
olive oil
salt pepper to taste

Instructions

Slice eggplant and zucchini. Season with salt, pepper and drizzle with olive oil. Grill approximately 5 minutes on each side until brown.

Slice Ciabatta bread. Rub garlic on each side.  Toast. Layer with a few spinach leaves, eggplant and zucchini. Drizzle with olive oil.
