Cheater's Guide to Quick and Easy Chicken Noodle Soup

Soup is a food that can be enjoyed any time of the year. There are soups that blend with the needs of every season, adding to its enjoyment. Today, soups form an integral part of the diet and are considered a good appetizer.

In this article are some quick and easy ways for making chicken noodle soup.

When you have a few guests popping in without warning, this is a great substitute to revive their taste buds. This soup can get ready in half-an-hour time with the preparation time less than ten minutes. This is ample enough to serve six people. Kids especially love this recipe.

For the soup, you need ingredients like onion, celery, chicken breast, egg noodles, carrots, basil and oregano, canned chicken broth and vegetable broth at hand.

Take a large saucepan. Melt one tablespoon of butter on medium heat. Chop onions and celery. Cook ½ cup onion chopped and ½ cup of chopped celery in the melted butter until it become soft and tender, for over ten minutes. Once the onions and the celery are done, take around 4 (14.5 ounce) of chicken broth and one (14.5 ounce) can vegetable broth, adding to the cooked onion-celery.

To this mixture, stir in ½ pound of chopped and cooked chicken breast, 1 ½ cups of egg noodles, one cup of sliced carrots, half teaspoon of dried oregano and dried basil each, along with salt and pepper. Once the mixture comes to a boil, keep it under low heat and leave it to simmer for about 20 minutes before serving. And your soup is ready.

Another easy way of preparing chicken noodle soup that takes only 15 minutes of your time is as follows:

In a medium saucepan, add 4 cups chicken broth, 1/8 teaspoon ground black pepper, 1 carrot, diced or thinly sliced, 1 rib celery, thinly sliced. Bring the ingredients to a boil, to which you need to add the uncooked egg noodles of around ½ a cup.

Then, leave this mixture to boil for about five minutes. In the meantime, take about ½ cup of peas from the freezer and leave to thaw. Once the mixture has been boiled for five minutes, add the thawed peas and 1 cup of cooked chicken that has been cut into small cubes. Put little bit of thyme for the flavor and the aroma.

Let it boil for another five to ten minutes or until the noodles and the peas are cooked and done. For garnishing, sprinkle freshly chopped parsley before serving. This will create enough quantity to serve four people.
