Chicken and Shrimp Fajitas

Fajitas is a Mexican meal of grilled meat (beef, pork, chicken) or shrimp served on a flour or corn tortilla. Usually the meat and/or shrimp is grilled with onions, peppers, tomatoes and vegetables.

Serrano pepper is a type of chili pepper from Mexico.

A tortilla is a type of flat bread made from corn or flour used to accompany a meal. Most often food is placed in the tortilla and rolled for fajitas or to make a burrito.

Ingredients

3 tomatoes
2 zucchini
2 Serrano peppers
1 medium size onion
2 half chicken breasts
8-10 large shrimp
tortillas

Preparation

Clean and slice chicken breast in strips.  Peel shrimp.
Cut up tomatoes, zucchini.
Slice onions and Serrano peppers

Instructions

1) In a large skillet, heat oil. Add onions and peppers.  Brown for a minute or two.  Add chicken and cook for approximately 5 minutes each side until done.  Keep in mind that the chicken will remain in skillet until all other ingredients are ready.

2)  Move the chicken to one side of skillet and add zucchini. Cook the zucchini for a few minutes.

3)  Make additional room in the skillet and add the tomatoes.  Cook for another two minutes.

4)  Last add the shrimp.  Since all the ingredients are now in the skillet, you will need to find room for the shrimp.  The shrimp must cook directly on the pan, not on top of other ingredients.  Cook again until shrimp is ready.

3)  Fold all ingredients in the skillet.  Do not mix too much!

5)  Heat tortillas and serve.
