Besides drinking and eating chocolate for delight and happiness, chocolate can be used for cooking and baking as well. Although all variety of chocolates are not used in cooking process but nearly all mouth-watering desserts in the world are made out of it.
Cooking with chocolate can be one of the most difficult jobs. Learn some basic chocolate cooking tips before trying your hand on it.
All the varieties of chocolates you get basically come from the seed of the cacao tree. But the variation lies in how these chocolates are processed.
The chocolates which are used for baking contains more cocoa butter than the candy bars. These chocolates are also known as unsweetened, baking, bitter chocolate. This type of chocolate is used for making cakes, brownies, cookies etc.
One more variety of cooking chocolate is bittersweet and semisweet chocolates. It is same as baking chocolate. The only difference is that sugar, vanilla, and lecithin are added to it to make it bittersweet or semisweet type. The sweetness depends on the quantity of sugar added to it. And this chocolate can be used in cooking only when the recipe requires it. But largely recipes require baking chocolate.
Following are some of the recipes which need chocolate as an ingredient for cooking or baking.
Vegan Dessert Sauce

This sauce is a mix of Grand Marnier with silken tofu. It tastes good when eaten with fresh fruits or plain cakes.
Ingredients
10 ounces silken soft tofu
1/4 cup cocoa powder
2 to 4 tablespoon maple syrup
2 to 3 tablespoon Grand Marnier
1 teaspoon vanilla extract
strawberries or sliced fresh peaches
Instructions
Drain the tofu for about 15 minutes and then puree it until creamy.
Add the tofu puree, cocoa powder, maple syrup, Grand Marnier, and the vanilla extract in a bowl. Blend carefully until the mixture is extremely smooth. Transfer the mixture in a container and refrigerate it for about an hour.
Chocolate Chip Cookie

Ingredients
½ cup light brown sugar
½ cup plus 1 tablespoon sugar
1 large egg
1¾ cup flour
unsweetened cocoa powder
½ teaspoons baking soda
¾ teaspoon baking powder
½ teaspoon salt
1¼ stick butter
1 teaspoon vanilla extract
6 oz semisweet chocolate chips
sea salt
Instructions
Mix butter and sugar until light and fluffy using a mixer. In a bowl mix egg and vanilla. Then add baking soda, baking powder, salt, cocoa powder and flour. After mixing add chocolate chips to it.
Make dough from the mixture and place it in the refrigerator until next day. On the next day you can bake the cookies using a parchment paper or a nonstick baking mat.
