split pea soup

What is better than an easy and great tasting soup recipe?  Not much, especially on a cold winter night or an evening when you just do not have the time to spend preparing food.

Place all the ingredients in the pot and cook for a few hours. Just keep an eye on it and stir occasionally. A very low maintenance and delicious recipe.

Ingredients

ingredients split pea soup

1 bag of split peas
4 carrots (diced)
1 medium onion (diced)
1 1/2 lbs. smoked ham hocks
2 bay leaves
Salt, pepper to taste
1 1/2 quarts of water

Method

Add water, split peas, diced onions and carrots, and ham hock to large pot. Don’t forget the bay leaves, salt and pepper. You can also add more (or less) water depending on the consistency of soup you want.

Check the bag of split peas to see if you need to soak in advance. Usually it is not necessary. And don’t worry about the ham being on the bone. It will break apart while cooking.

Bring to a boil and simmer for approximately 2 hours. If ham is not in pieces or if you do not want the bone in the soup, remove the ham, shred and return to pot.

Done. It’s that easy!
