
Pasta Fagioli (Pasta and Beans) is a traditional Italian dish. Everyone has a favorite way of making it. Different type of beans and pasta, more or less sauce. Whatever style you like, Pasta Fagioli is an authentic Italian recipe that is healthy, easy to make and ready in 20 minutes.
Ingredients
Serves 4-6
1 can cannellini beans, 15 oz.
1 can tomato sauce, 8 oz.
2 tablespoon extra virgin olive oil
1 clove garlic, minced
3-4 basil leaves, dried
1/2 teaspoon dried oregano
crushed red pepper to taste
1 pound pasta, small size pasta – favorites are ditalini or shells
Instructions
1) Boil pot of water for pasta.
2) In sauce pan heat oil and add garlic, crushed pepper, oregano and basil. Simmer for 1 minute. Do not over brown.
3) Add tomato sauce and one can of water.
4) Simmer sauce while pasta is cooking in boiling water.
5) Drain and rinse beans. Add the beans in sauce 3 minutes before pasta is ready.
Drain pasta and place back in pot. Add sauce and mix. Cover and let stand for a few minutes. Garnish with Pecorino Romano cheese and additional crushed red pepper as desired.
