
Wines are used in various recipes to enhance the flavor of the dishes. There are various wines that are used in cooking like red wine, white wine, sherry, Marsala and Madeira.
The basis for choosing a wine to use in cooking depend on two factors. First is the type and region of wine that will enhance the flavor of the food. Secondly, and most important, is you should always cook with a wine that is good enough for you to also drink with the meal.
A favorite Italian recipe
This recipe is a long-time family favorite. Lasagna is an Italian dish so a Barbera wine from the Piedmont Region of Italy goes with this meal.
Lasagna Recipe
Ingredients
1 1/2 pounds hamburger (chop meat)
1/2 cup of dry red wine
12 ounces of lasagna noodles
3 tablespoons vegetable oil
2 8 oz. cans tomato sauce
1 6 oz. can tomato paste
1 teaspoon oregano leaves
1 medium chopped red onion
2 cloves garlic (minced)
2 teaspoons basil leaves
8 ounces mozzarella cheese (sliced)
1 lb. ricotta cheese
1/2 teaspoon of pepper and sugar
1/2 cup shredded Parmesan cheese
1/2 cup of water
1 teaspoon salt
Method
First sauté the minced onion until soft. Then, add hamburger and garlic to the onion. Cook them until brown.
Next add tomato paste, wine, tomato sauce, water, oregano, basil, salt, pepper and sugar. Stir. Let it boil and reduce heat. Cover it and let it slowly simmer for about 90 minutes.
Meanwhile cook the noodles. Lay 1/3 of the noodles in the bottom of a baking dish. Cover it with 1/3 of the meat mixture. Then, top it with 1/3 of the mozzarella and ricotta cheese. Repeat this until all the ingredients are used.
Now sprinkle it with Parmesan cheese on top. Bake it at 350 degrees for 30 minutes.
