Great Tasting Healthy Pasta Dishes

When traveling in Italy, I am always able to find good pasta dishes to enjoy.  In fact, pasta can be found just about everywhere. In Italy, there are so many tasty and healthy pasta dishes that use fresh ingredients and are also easy to make.

Pasta is one of my family comfort foods. It can be cooked quickly and it tastes good. That’s why I am always looking for different types of healthy pasta dishes for easy and quick dinner recipes.

More and more people now eat whole wheat pasta. Whole wheat pasta is a good source of dietary fiber and contains essential trace nutrients as well as phytochemicals. You can always substitute your favorite pasta recipe with whole wheat pasta.  So it is still possible to eat healthy and also say “yes” to pasta. You can now enjoy healthy pasta dishes that are also prepared in less time. What more can you ask for!

Here are two easy and quick pasta dishes using low-fat ingredients to make the recipes healthier for you and your family.

Greek Pasta with White Beans and Tomatoes

Ingredients

• Drained and rinsed Cannellini beans-19 ounces
• Diced tomatoes Italian style- 14.5 ounces
• Penne pasta-8 ounces
• Washed, chopped fresh spinach-10 ounces
• Crumbled low-fat feta cheese-1/2 cup

Method

Cook the pasta in boiling salted water until Al dente and drain. Take a non-stick skillet, mix the Cannellini beans and tomatoes. Boil over medium high heat. Reduce the heat and simmer for ten minutes. Add spinach to the sauce and cook for two minutes. Stir continuously until the spinach wilts. When you serve the pasta, pour the sauce over the pasta and sprinkle with low-fat feta cheese.

Pasta Shells Florentine

Ingredients

• Low-fat ricotta-1 cup
• Jumbo pasta shells- 16 ounces
• Thawed, chopped and drained spinach-10 ounces
• Egg white-1
• Low-fat mozzarella cheese, shredded-6 ounces
• Italian seasoning-2 tablespoon
• Ground nutmeg-1/4 teaspoon
• Spaghetti sauce-16 ounces
• Grated low-fat Parmesan cheese-1 tablespoon

Method

In a pot of salted water, boil the pasta shells until Al dente and then drain. In a bowl, mix the low-fat mozzarella cheese, spinach, egg white, low-fat ricotta cheese, nutmeg, low-fat Parmesan cheese and Italian seasoning. Preheat the oven to 375 degrees. Fill each shell with a tablespoon of the mixture. Pour the spaghetti sauce on the shells. Baked covered for thirty to forty minutes. Add additional sauce if desired.
