Soup is an essential and easy to digest food item that is made by combining vegetables or meat in hot water or stock. It is a very nutritional as well as delicious food.

Winter season is approaching and what would be better than having hot steaming soup in your cozy dining room.

Here are few soups recipes that are healthy as well as delicious.

Soup Recipes

Bean and Rice Soup

Ingredients

1 can of white kidney beans
1 chopped carrot
1 can of black-eyed peas
1 onion diced
1 can of Lima beans
1/4 cup parsley finely chopped
1 can dice tomatoes and chilies
1 cup rice
3-4 cloves of garlic, 1 bay leaf, Pinch of cayenne
1 tbs olive oil
black pepper and salt to taste

Instructions

  • First put the olive oil in a pan, and then add onion and bay leaf. Cook until onion turns light brown or 10 minutes. Next add minced garlic and cook for some time.
  • Now add cayenne and parsley. Then add tomatoes and chilies.  This will stop garlic from getting brown.
  • Then pour all three cans of beans into the pan.  Also add carrots. Put as much water as needed to cover all ingredients and cook all day.
  • When done add salt and pepper.
  • Just 20 minutes before serving add cup of rice and cook covered.

Chicken Soup with Almonds

Add almonds to age old chicken soup to get a new flavor.

Ingredients

4 1/2 cup of chicken stock
6 tbs of vegetable broth
1/4 cup uncooked pasta
1/2 cup almonds
3/4 cup chicken breasts, boneless, skinless and cubed
3/4 cup parsley sprigs
4 tbs butter buds
3 tbs chives
1/4 cup grated Parmesan cheese
1 clove garlic
1 tbs lemon juice
salt and pepper as per taste

Instructions

  • First toast the almonds in a pan. Then add 4 tbs vegetable broth along with garlic and sauté 1 minute.
  • Add parsley, butter buds, chives, lemon juice in a food processor and make coarse puree out of it. Then add Parmesan cheese and blend.
  • Now add remaining stock and chicken to the pan and season with salt and pepper. Boil and add pasta to it. Cook until pasta is done. Now add chicken and pureed mixture to the stock.
  • Now add lemon juice as per required taste.
