Add a Mexican style to the meal! Turn everyday Cornish hens into Mexican style Cornish hens.
2 Cornish hens
2 limes
1 medium size onion
1 can of beer
Marinate the Cornish Hens
In a large bowl add one can of beer (any type will do), 1 medium size onion – sliced, and 2 limes squeezed (also throw in the lime after squeezed.) Cut Cornish hens in half and place in the marinade. Make sure you defrost and clean them first. Marinate for at least three hours.

Broil the Cornish Hens
Total of 45 minutes broil time in the oven. Place Cornish hens on rack. Broil for 20 minutes on each side. Flip Cornish hens every 10-15 minutes on both sides until crispy and golden brown. You can also grill them on the BBQ.
