Fresh Ingredients
8-10 vine tomatoes
8-10 leaves fresh basil
2-3 cloves garlic
Pecorino Romano cheese
2 tablespoons olive oil
salt and pepper
pound of pasta (Pappardelle or Tagliatelle)
Easy Cooking Instructions
Cut vine tomatoes in fours. Slice garlic thin. Add olive oil, basil, and garlic to large skillet pan. Make sure the pan is deep enough to hold all the tomatoes and the pasta that you will add later. Simmer for a minute or two. Do not brown the garlic. Add the tomatoes. Cook approximately 15 minutes until tomatoes become a sauce, or less depending on what consistency you like the tomatoes. Add salt and pepper to taste.
Boil the water for the pasta while you are making the sauce. Cook the pasta. When pasta is ready add directly to tomato sauce in pan. Mix and serve. Garnish with fresh basil and Pecorino Romano cheese. It’s that easy!
