
What is Marsala wine?
Marsala is a sweet or dry fortified wine produced in the Italian city of Marsala Sicily.
Ingredients for Veal Scallopini Marsala
8 oz veal scallopini, cutlets, or thin-sliced veal (1/4 inch thickness)
1/3 cup flour with salt and pepper to taste
2 tablespoon olive oil
2 tablespoon butter
8 oz sliced mushrooms or more if you like
1/2 dry Marsala wine
1 small sliced shallot
Instructions
Add salt and pepper to flour on flat surface. Dip each piece of veal in flour on both sides.
In large pan, heat one tablespoon butter and olive oil until butter is melted. Add mushrooms and shallots. Stir and cook for approximately 8 minutes or until mushrooms are soft and tender. Remove the mushrooms and shallots. Place on a plate.
Do not remove drippings from pan. In the pan add the additional tablespoon of olive oil and butter. Heat. Add floured veal to pan. Do not stack the veal or crowd in pan. Cook until brown on both sides and then place veal on plate with the mushrooms and shallot. Repeat until all veal is browned and cooked and on plate with mushrooms and shallot.
Leave additional drippings in pan. Add Marsala wine to pan. Simmer and stir until wine is reduced and thickens. Place the veal, mushrooms and shallot back into pan with sauce. Cook again for a minute and serve.
